There are a lot of airlines flying to Manila from Rome or Milan, though, not direct anymore (Alitalia used to fly here but closed their services). Alitalia is about 1,200 Euros from Ancona. Since the season is considered peak, differences would vary based on the date of flights, i.e., flying on the 24/25 or 31 of December.
Most Asian airlines offer lesser cost, like Cathay Pacific, Oasis Hong Kong, Emirates, and Qatar Airways. These airlines would cost around 1,000 Euros round trip per person from Rome. Luca Toso actually discovered the Oasis Hong Kong and told me that they fly from London to Hong Kong at 550 Euro, which is not bad, if you wish to have a pit stop in Hong Kong.
If you would discover any flight ranging from Euro 700 to 800 from Ancona to Manila or Rome to Manila, I believe that it would be a very good deal!
For our friends from Italy, Mauro and I suggest that you guys arrive at least on Friday, 28 December 2007 and you can leave on 4 January 2008. A total of 8 days and 7 nights.
By the way, Luca, you might consider a career in travel and tours :p
